Publisher's note: When it comes to pasta salad, I'm very picky. That three-color pasta with a mix of veggies and bottled salad dressing that you find at most summer affairs? Bleh! It just doesn't work for me at all. I don't find the colored pasta appetizing in the least and the bland veggies and processed dressing doesn't help.
A super fresh dish with a few seasonal ingredients that celebrate the flavors of summer and look really appealing.
For example, a nice, fresh Greek pasta salad with real Calamata olives, tangy feta cheese, a touch of authentic homemade Greek dressing tossed with orzo and plenty of fresh green herbs works every time. Try this lemon orzo salad that celebrates early spring veggies like asparagus, fava beans and peas.
Or a simple Caprese salad...just slice up some ripe, red tomatoes, top with bite-size pieces of fresh mozzarella (Buffalo Mozzarella is best) and whole or gently torn basil leaves. Drizzle with your best extra virgin olive oil and season well with sea salt and fresh-ground pepper. Perfection! Add a tiny splash of Balsamic vinegar if you want more bite. Try this stacked Caprese salad for an interesting twist on an old favorite.
When you only use a few ingredients, make them the absolute best you can find. A little goes a LONG way when the flavors are just right.
